Ingredients:
1 rack beef ribs
3 tbsp. Fatboy rub
4 tbsp. Chubba-Licious BBQ sauce

Method: Remove membrane from back of ribs, rub with spice mix and let rest for an hour. Grill ribs over medium high heat and set in shallow roasting pan. Fill to about one-inch deep with water, beer or other liquid like beef stock may also be used. Cover pan with cling film and foil and place in oven at 300 degrees for about 2.5 hours. Remove from pan and finish on barbecue on medium for three minutes per side. Brush with BBQ sauce and let glaze. Serve with lots of napkins.
