Seeing the gourmet food prepared by the Decadent Chef, I couldn't help but reflect on what a far cry this elegant meal, topped by handmade, mouth-watering truffles, was from my usual weekday fare! From the apple-cinnamon cranberry sauce, squash soup to the roasted turkey, the entire meal was a feast for the eyes, as well as the palate. Truffles epitomize special occasions, so I thought, what better way to capture the spirit of the Christmas/holiday season.

Cranberry apple sausage dressing By The Orangeville Banner
Serves 8
Ingredients:
1 loaf whole wheat bread, cubed
1 medium chopped onion
1/2 cup of butter
1 cup chopped celery
2 cups ground sausage
1 tsp. sage
1/4 tsp. marjoram
1/2 tsp. thyme
1/4 tsp. rosemary
1/4 tsp. black pepper
1/2 tsp. salt

Ingredients:
1 large butternut squash (or two small)
1 Granny Smith apple
1 tbsp. vegetable oil
1/2-3/4 cup onion, very finely diced
1 tbsp. butter
2-3 cups chicken stock

Cut butternut squash lengthwise and remove seeds. Preheat oven to 375 F.
